It can be exhausting coming home from a long day at work only to hop into making a meal. For those such nights, I always try to opt for something easy that my family will think I spent a lot of time making. My absolute favorite dinner hack is different types of grilled cheese sandwiches. Who doesn’t love a good grilled cheese? These four favorites are sure to impress.



This is by far one of the easiest sandwiches to make. Butter your bread as usual, but instead of cheddar cheese, grab some mozzarella or provolone. Use two slices and load the center full of pepperoni. I always serve mine with a side of marinara for dipping. You can trade out the pepperoni for salami or sliced Italian sausage. You can even add olives, or sautéed onions and peppers in with the meat as well.


Mac N Cheese

This sandwich is so good, ya’ll. The main thing to remember here is that your mac n cheese needs to be cold. Because of that, it is a perfect way to reuse your day old pasta. As always, you will need two slices of cheese. I like cheddar for this one, it melts perfectly with the mac n cheese. The pasta heats up fast. By the time the bread is toasty and the cheese melted, you will be good to go.



THE BEST way to repurpose leftover spaghetti. I love to layer this with mozzarella. Like the mac n cheese sandwich, be sure to use cold spaghetti. It will hold together better and be less of a mess. For added flavor, sprinkle some Italian seasoning on the outside of the bread before it is toasted. This is a leftover your child is sure to enjoy.


Philly Cheese Steak

Finally, a grilled cheese suited for a meat lover. It is packed with flavor and is incredibly filling. The best cheese to use with this is provolone. Feel free to pile it high with shaved beef and peppers. Once the cheese melts, it will bind everything together nicely. Another great finishing touch is a bit of au jus. You will be more than pleased with this dipped dinner delight.


These are all sure to be home runs. My kids are always happy when we have these grilled cheese variations for dinner. That in itself is enough for me, but the ease of it all is a definite plus. There are so many twists that you could put in these sandwiches, so let your creativity flow!
