I have to admit, I am pretty proud of myself with this one. I had a dream a few nights ago that I made this delicious chicken Parm casserole. When I woke up, I knew I had to figure out a recipe. Turns out, it was super easy. I didn’t take pictures along the way because I didn’t even think of blogging about it until it was done. It is so delicious!
You will need:
16 oz dry pasta (I used rigatoni)
36 oz pasta sauce
2 lbs chicken breasts, cut into bite sized pieces
2 cups mozzarella cheese
2 cups Italian bread crumbs
Oil for frying
Preheat oven to 350 degrees.
Cook pasta according to directions.
Add garlic salt and pepper to bread crumbs. I didn’t measure, just add according to your taste.
Dip chicken pieces into egg and then dredge in bread crumb mixture. I fried these in oil, but you can bake them to keep it healthier. Once they are done, sprinkle with salt.
Add pasta sauce and half of the cheese to pasta and pour into a greased baking dish. Top with chicken. Ideally, the chicken will cover the entire top. Sprinkle on the remaining cheese. Cover with foil and bake for 15 minutes. Top with Parmesan cheese when serving.
