Cheese Tortellini Cheesy Mac
You know what I love? Mac-n-cheese. It is my ultimate comfort food. It is also delicious and easy to make a homemade version. I had an epiphany earlier this week while contemplating what to make for dinner. I had a bag of cheese tortellini, but I wanted to do something other than covering it in marinara sauce. Why not make Mac-n-cheese with it? And how had I never thought of this before?!? This was amazingly easy to make.
I used this tortellini:
Boil it for 15 minutes. Drain and set it aside.
Add to a pan 2.5tbs butter and 2 cups milk. I also added a dash of both garlic powder and onion powder. Bring to a low boil. Dissolve 1tbs cornstarch into 1tbs cold water. Stir it into milk mixture and whisk until it gets a bit ticker. Add to that 4oz cream cheese and 2 cups shredded cheese (I used cheddar jack). Once that is melted, stir in your tortellini and you are done!
It is creamy and packed with flavor. As you can see, I topped mine with bacon. That makes everything better, right? This is definitely my new favorite side dish. It will have to make its debut to family at some point during the holidays. Happy eating!
