This is the last week of work for one of my co-workers. As I was trying to decide what to do to celebrate her before she made her departure, I thought a pot luck would be fun for everyone. I wanted to make something light and fun to bring. One of my favorite finger foods to make is pinwheel sandwiches. They are quick and super tasty. I thought a loaded potato salad would pair well with them. So today, you get a food duo.

Let us start with the potato salad. I used 1.5 lbs of small red potatoes. I diced them and then boiled them in lightly salted water until tender.

Once the potatoes are done and cooled (I threw them in a quick ice bath because I didn’t have time to wait for them to cool on their own) you can throw in your boiled eggs, green onion, scallions and cheese. Add as much or as little as you want  for me, I use 3 eggs, 3 strips of bacon, 1 cup of cheese and 1 green onion.

I binded (Is that a word? If not, it is now) them all together with a dressing of half sour cream and half mayo with a dash of mustard and black pepper. Done. This potato salad is bursting with flavor!

As for the pinwheels, you need flour tortillas (I use extra large), salsa or garden veggie flavored cream cheese, roasted bell peppers, lunchmeat of your choosing and lettuce. In a few easy steps you will have a tasty treat.

Cover your tortilla with cream cheese:

Add a strip of roasted peppers (I made my own for the first time and WOW. The flavor is worth the effort!):

Add your lunch meat:

Add some lettuce:

Spread a bit of cream cheese on the lettuce to help hold the sammie together once you roll it:

Roll it up:

Slice and devour!:

It is really easy and your lunch guests will surely be impressed! I could eat so many of these pinwheels… I think I could probably live off of them. The creamy cheese and the roasted peppers and just so delish! You can change it up with different kinds of cheese spreads and meats. You could even make a very tasty Italian variation with salami and pickled banana peppers.
